THE English Corzo Association has published a magnificent book, which offers a complete recipe for cooking venison. The book is titled Capreolus deliciosus because capreolus capreolus is the scientific name of this pequeñoy beautiful animal. As far as the deliciosus, who studied with me seven years of Latin in high school know that it means "delicious", because indeed their flesh is more delicate and tasty, even the beef and social , supported by comparison with that of deer. The offered free recipes because, as stated in the preface, the habit of cooking bush meat has been lost, while the English people we became urban. It is, therefore, to bring the deer of the mountain to the kitchen.
So you can get an idea of the delights for your taste buds can offer deer, I will suggest a full menu, in the light of the recipes in the book. Input, you can start with a fillet of venison tartare with cheese, liquid egg yolk and mustard. Main course will do well a loin roast with quince compote, apricot and truffle sauce, and can continue with some venison chops to spit, chestnut pudding and grapes and, for dessert, venison with wild berries. How to prepare these dishes and many others of similar delicacy is explained in the book in detail.
The problem is that to cook a deer need to have venison and it is not in our markets. It takes a hunter friend who also is very generous, because their meat is scarce. The second problem is that the animal is not left stewing alive, but previously, you must kill. This killing, first whatever the animal species that serves food, is implied and no one alive remembers, when your plate is a steak or hake.
